Macadamia nut oil hummus

Serves six to eight people as a starter

Ingredients: 

Two 400g cans of chickpeas (reserve the liquid and a few chickpeas for decoration)

Four tsp of tahini

Two garlic cloves, crushed

One tsp crushed sea salt

Six tbsp of macadamia nut oil (plus extra for drizzling)

Three and a half tbsp of freshly squeezed lemon juice

Paprika (optional)

Coriander or parsley leaves (optional)

Method:

So simple, yet so effective: simply pop everything into a blender and blitz!

Once smooth and nicely whipped, plate up and drizzle with This Is Good paprika infused macadamia nut oil and sprinkle with macadamia nuts, coriander and a couple of whole chickpeas.

One tsp paprika

Method:

Whisk one tsp paprika with two tbsp This Is Good Macadamia Nut Oil.

This infused oil tastes delicious drizzled over This Is Good Hummus or over a simple salad.
