Courgette and macadamia nut cake

Cold pressed rapeseed oil contains half the saturated fat of olive oil, and is a great source of essential fatty acids, omega 3, 6 and 9. Borderfields was launched in 2005 by a group of farmers who wanted to create a healthy and delicious cold pressed rapeseed oil sourced solely from British fields. This recipe uses the Borderfields Lemon Infused version.
For the cake
250ml Borderfields Lemon Infused Cold Pressed Rapeseed Oil
120g macadamia nuts
300g courgette
Zest of 1 lemon
250g caster sugar
½ tsp of mixed spice
Pinch of salt
3 large eggs
70g buckwheat flour
210g self-raising flour
For the syrup
1 lemon
2 sprigs of rosemary
3 tbsp water
70g caster sugar, plus a little extra for garnish
